You can pickle anything, eggs, beets, lemons, peaches.  But “pickles,” according to the state of Texas, are cucumbers.

That’s it. Pickle apples? Well you need to get a permit and pay $700 to sell at the farmer’s market. Isn’t Texas supposed to be one of the freer states? Who knew there were such barriers to entry in the pickling business?
